Arthur Christmas Movie Review & Peanut Butter Popcorn Bytes

I'm delighted to share with you my thoughts on this uniquely high tech, laugh out loud and heartwarming  movie.  It's a seasonal standout with it's intriguing, modern day take on the North Pole and the high tech methods used to aid in the delivery of presents on Christmas Eve.  The star of the movie is Arthur, the youngest son of Santa.  There are 3 generations represented in this somewhat dysfunctional family, and each has his own perspective on how to deliver Christmas cheer.  The movie opens with the heartfelt letter to Santa from a little girl named Gwen Hines.  Gwen's letter is filled with questions about Santa and Christmas.   As the story begins to unfold, you'll see some of Gwen's questions answered as you witness the spy like antics of tech savvy elves who land in neighborhoods with stealth like precision and enter homes with the assistance of hand held computers and covert operations.   

The delivery of presents on Christmas Eve is a huge world wide success, until it's discovered that one child, Gwen, was missed.  It falls to the less than eloquent, and slightly clumsy youngest son of Santa to make Gwen's dream of a bicycle come true.  With the assistance of Grandsanta and accompanied by an unruly elf, Arthur sets off on a spectacular adventure filled with both fright and delight.  The thrills of his journey in finding her home includes several wrong turns and many twists along the way bringing fun and engaging humor that appeals to all ages.  After conquering his own disillusionment, Arthur sets his course to success.  We found ourselves laughing out loud, and entertained from start to finish.  It's a movie that the whole family can enjoy year after year!  
We all know that no movie would be complete without an equally fitting movie munchie to accompany the thrills and chills of the journey!  So, this movie inspired me to develop these "Peanut Butter Popcorn Bytes" for snacking along the way.

For the PB Popcorn Bytes you'll need:2 quarts salted butter flavored popcorn [approximately 8-9 cups total]1 10 1/2 oz. bag of mini marshmallows1 10 oz. bag of peanut butter chips2 cups of party peanuts 1 stick of butter [1/2 cup]2 tsp. pure vanillafor the ganache:1 1/2 cups of milk/semi sweet/dark chocolate chips [your preference]1/2 cup heavy creamto garnish:1/2 cup of finely chopped party peanuts
In a large mixing bowl, mix together the popcorn and peanuts.  You'll need approximately 8-9 cups of popped popcorn.

In a heavy bottomed saucepan, melt 1 stick of butter.  Add the peanut butter chips and marshmallows.  Stir constantly over low heat until completely melted and heated through.

Remove from the heat and stir in two teaspoons of vanilla.

Pour the peanut butter marshmallow coating over the popcorn and peanuts.  The peanut butter mixture is thick and sticky giving the popcorn bytes their chewy texture.  It's very helpful if you have someone to help with this task.   Stir with a non stick spatula until the popcorn and peanuts are completely coated.

Press the mixture into a buttered 9x13 inch dish.  Cool completely on the counter for around 2 hours or until the bottom of the dish is cool to the touch before cutting. 

To make the ganache:Melt 1 1/2 cups of milk/semisweet/dark chocolate chips with 1/2 cup of heavy cream in the microwave until smooth then set aside while you cut the squares.

Line a baking sheet, with wax paper.  Cut the peanut butter popcorn into 24 2 inch squares  or 48 1 inch squares.    Place onto the wax paper.

Drizzle the squares with the warm ganache and sprinkle each with chopped peanuts.  Cool completely.  Store tightly covered at room temperature. Yield: 24 or 48 popcorn bytes
