Gluten-Free Lemon Poppy Seed Muffins

I made these muffins using my normal muffin mix recipe posted on this blog. I added the finely grated zest of one lemon (the yellow part of the skin only) and 1 Tblsp poppy seeds. For a glaze I used 1 cup of powdered sugar and stirred in lemon juice until the mixture was smooth and fairly thin and drizzled it over the warm muffins. The easiest way to do that is to place a sheet of wax paper on the counter, add a wire rack and put the muffins on the rack. Dip a spoon into the glaze and go back and forth over the muffin with a zig-zag motion. The muffins in the picture only has 2 tsp of poppy seeds and it was not enough!
