Barbecue Chicken & Bacon Pizza

I recently participated in a Pinterest contest and as a daily winner, I won a bottle of barbecue sauce. When I received it, I was delighted to find out that it was an all natural, gluten free product made by a company called "Outta The Park" from right here in North Carolina. So, I decided to whip up a pizza, and share it with the makers of the sauce to show my appreciation. This b'cue chicken and bacon pizza is not new to my family, it's one of our all-time favorites.  This pizza falls into the category, of easy, no fuss meals. Add a salad and voila, dinner in under 30 minutes.



You'll need:
1 tube of refrigerated pizza dough [I used Pillsbury Classic]
1/2-2/3 cup "Outta The Park" B'cue Sauce OR your favorite
1 1/2 cups roughly chopped roasted chicken
6-8 slices of bacon cooked and crumbled
1/3 cup thinly sliced red onion
pickled jalapeno peppers [optional]
1 1/2 cups shredded Colby-Jack Cheese
2 Tbs. chopped cilantro
garlic salt to taste
shredded parmesan cheese

Preheat the oven to 400 degrees and line a large baking sheet with parchment. Shape the dough into a 9x13 inch rectangle. Spread half of the sauce over the pizza crust, then arrange the chicken, onion, jalapeno slices and bacon crumbles on top. Season with garlic salt and pepper to taste. Drizzle the remaining sauce on top and sprinkle with shredded cheese. Place into the oven and bake for 16-18 minutes until golden. Garnish with chopped cilantro and a sprinkle of shredded parmesan cheese. Serve hot! Yield:  8-10  pieces
