If you have never made popovers before, this is a recipe you have to try. Popovers are very crispy on the outside and rather hollow and creamy on the inside. They are so easy but look dramatic. I love to browse on King Arthur Flours website. They have some great GF flours and mixes (see my post a year ago on Elise's wedding cake). If you have never been much of a baker I would encourage you to check out their site for some baking lessons. Their directions are great and they also have videos. I have gotten all of my specialty pans from them. A popover pan is narrow and deep, but you can make this recipe in a muffin tin. These smell delicious and KAF did not need to add the line "serve immediately" to their recipe! In the picture mine are huge because my pan only makes six, but this recipe would make 12 in a smaller pan or muffin tin.I will give you my shorthand version of their recipe or go to http://www.kingarthurflour.com/recipes/gluten-free-popovers-recipe for the real deal.
1 cup King Arthur GF multi- purpose flour¼ tsp xanthan gum½ tsp salt1 ¼ cups milk, slightly warm4 large eggs3 Tblsp butter, melted
Preheat oven to 400 degrees. Grease a 12 cup popover panor muffin pan. In a blender mix eggs, butter and milk. Add the flour,xanthan gum and salt. Blend until batter is smooth. Pour the batter into the prepared pan, filling each cupabout 2/3 full. Bake for 25 minutes, then reduce the heat to 350 and bake anadditional 10 minutes or until dark brown. Remove from the oven and let restfor 10 minutes.
