Gluten-Free Make Ahead Meatballs


Gluten-Free Meatballs
3 lbs lean ground beef1 lg onion, finely chopped or grated2 eggs1 cup GF bread crumbs (about 2-3 slicesbread)small, 8 oz can tomato sauce2 Tblsp Worcestershire sauce2 Tblsp dry parsley1 tsp salt½ tsp garlic powder½ tsp pepper
Combine all ingredients and mixthoroughly. Press the entire mixture out evenly onto a baking sheet.Slice with a knife into uniform squares of desired size. I cut mineinto 6 squares across by 8 squares down which makes 48 meatballs.Pick up squares one by one and firmly roll into ball shapes. Thisensures uniform sizes and makes it go quicker. You could alternatelyuse a meatball or cookie scoop. Place on 2 baking sheets and cook ina 400 degree oven for about 20 minutes or until brown.Options:2 egg whites could be substituted foreach egg.You could use commercial GF breadcrumbs or toast and crumble GF bread.Ketchup could be substituted for thetomato sauce but imparts a sweeter taste.
Once browned, meatballs can be frozenand added to any sauce or dish as needed. If so, themeatballs only need to be brown, they do not have to be done in themiddle. I get 6 meals for 2 people with leftovers from this recipe which is ½ lb meat per meal. I like to package mine in separate mealsized bowls for freezing, but you can freeze them in one containerif you don't stick them all together. This is a great "Oops I forgot to plan dinner" meal. Just keep a jar of prepared spaghetti sauce on hand, or homemade sauce in the freezer. Try these meatballs also in my Beef Stroganoff recipe in place of the beef or just tossed with a few sautéed vegetables like in the picture.

One night you will come home from work dog-tired. You will plop a jar of sauce into a pan and add a bowl of frozen meatballs. You will start a pot of water to boil, sit down with a glass of wine to read the paper. At that point you will say "that Gloria is like a genius." Trust me, the moment will come. Non-gluten-free readers can just buy a bag of frozen meatballs, so they will not appreciate this moment. 
Press the meat mixture out onto a baking sheet and cut with a knife into uniform squares.

Pick up squares and firmly roll into ball shapes, trying to keep them a fairly uniform size.

Bake until brown and freeze. They will hold their shape when later added to dishes.
I haven't been posting many recipes lately, but there is some good news. I have been outgrowing this google blogspot and have started a new website (it is not live yet!). This blog will stay live until I have everything moved over, so continue to use it! Besides the gluten-free recipes it will focus on diabetes friendly, grain-free etc, as many people with those interests currently use this blog. It will also feature many homemaking, gardening, canning, decorating, sewing and craft tips. My main change will be that it will be very "chat-friendly" as I think we can all learn from each other. My current blog makes it difficult to leave comments and I receive a lot of emails. I would much rather chat back and forth with you on the blog! It will be easy to subscribe and have it delivered to your email. Thank you so much for your interest and support since I started and I look forward to the future.
