Low Carb Gluten-Free Cauliflower Pizza Crust or Breadsticks |
½ head of raw cauliflower, grated
1 egg plus 1 white
1 Tblsp olive oil
½ cup mozzarella cheese
2 Tblsp Parmesan cheese
¼ tsp salt
1 tsp oregano
¼ tsp garlic powder and onion powder
Heat oven to 400 degrees. Grate the cauliflower and mix with other ingredients. Place a piece of parchment paper on a cookie sheet. Press cauliflower mixture out thinly in a circle for a pizza or a little thicker in a rectangle for bread sticks. Bake about 20-25 minutes or until brown. Remove and add any pizza toppings and bake until cheese is melted, or eat it as is.
Optional: Take out of oven after about 15-20 minutes, flip over and remove parchment. Bake until brown. The pizza stone did not brown it on the underside either.
I have been experimenting with pizza crusts using raw and cooked cauliflower. To use cooked you must steam the cauliflower, squeeze any moisture out and grate it, then squeeze again. Using the raw cauliflower seemed to be easier and not much difference in the finished product. The weird thing about this is it doesn’t seem to brown on the bottom, only the top! Hence the flipping over part. For breadsticks, get it pretty brown, for the pizza crust that will be baked some more make it a little less brown.
This is a super low carb GF recipe. One more substitute for using expensive GF flours. I also have a recipe on the blog for zucchini pizza crust, but it used a little flour.
