Steak and Provolone Sandwich
This weather has been so hot, it's hard to think about eating a big meal, let alone cooking one. I had a package of thin sirloin steak (usually called sandwich steak) thawed but I was too hot and tired to cook much after work. I cut one of the steaks up and stir fried it with a little olive oil, salt, pepper and garlic. I removed it from the pan and stir fried 1/2 of a red pepper and 1/2 of an onion, both cut in strips. I served it on bread with a slice of smoky provolone cheese. Delicious little meal! And I only used one steak for two people as it actually made 2 sandwiches for my husband and one for me.

For the skillet meal I placed a bowl of Mr Dell hash browns in the microwave for 4 minutes. While that was cooking I stir fried a thin sirloin steak cut into small bits, 1 clove minced garlic, 1/2 of a chopped onion and a yellow pepper, two ribs of chopped celery and about a TBLSP of olive oil. After they were cooking for a couple minutes I added the hash browns and cooked about two more minutes until everyting was nicely brown. I served it with some salad and it was a quick meal on the table in less than 15 minutes! Meat, vegetables and starch all in one little pan. If you use a non-stick skillet you need very little oil and it's an easy clean up.
