Gluten-Free Tomato Pie

Gluten-free biscuit dough
Happy Sunday gluten-free bloggers! Hopefully you are cooking some yummy things this weekend! It is such a relief here in Illinois to have some cooler temperatures. I realize there really was nothing wrong with me except for the 100 degree weather. I worked around the house like tornado yesterday.

Of course we have plenty of tomatoes to pick at this time of year so I wanted to tell you about this delicious recipe and a cool website http://www.agardenforthehouse.com/
The author is Kevin Lee Jacobs and I just love his site which is gardening and cooking and all about his beautiful house in New York. He is so talented and likes to do all of the things I like. I dream of having gardens like his, but of course I would have to stop moving! His recipes always sound so delicious (his writing makes you think you could almost taste the food). I often think....I should try to make that gluten-free, but I haven't so far. His tomato pie looked so delicious I had to try it though.
http://www.agardenforthehouse.com/2012/08/classic-tomato-pie-2/  Several people had left comments about trying it GF but it didn't come out well. I think some mentioned the horrible words GF Bisquick. Everyone knows my feelings on that one....an expensive little box of dust. And I thought...GLORIA, you know you have some good biscuit recipes on the poodle! And I have to say it was a delicious as Kevin says. Mike and I ate it for 2 days and it is gone!!! I am having kids over today and am seriously thinking of making another one! He notes in his recipe which uses mayonnaise that his friend uses yogurt instead. So I went middle of the road and used half mayo and half Greek yogurt.
Here is my biscuit recipe (I did not make them into rounds, just pressed the dough into the pan) and I also have other biscuit or crust recipes on the poodle that could work.

Biscuits1 ½ cup rice flour½ cup sorghum flour1 Tblsp baking powder1 tsp xanthan gum1/2 tsp salt4 Tblsp shortening (butter, margarine or Crisco)1 egg½ cup buttermilk¼ cup milkMix dry ingredients in large bowl. Cut in shortening. Combine egg and milks in a small bowl and add to flour mixture. Stir until combined. Lightly kneed and press out to about 1 inch thick. Cut circles with a floured biscuit cutter or drinking glass. I made 15 small biscuits. Place on greased baking sheet with sides touching or in greased muffin pan. Before baking brush surface with melted butter or oil if desired.Bake at 350º about 20 minutes or until golden brown.
So check out Kevin's site for the Tomato Pie recipe ( sorry I don't copy or reuse someone else's recipe). And while you are there subscribe to his blog and check out his story about knowing Julia Child and the video of Julia auto-tuned. Hilarious! "We all need a little fat to absorb our vitamins."
PS: Kevin,  if you see my blog; doesn't my pic of the GF biscuit dough look like canned? My husband walked into the kitchen and said "What are you doing with those?????". We have had a GF house for almost 20 years!
