Hello bloggers! I hope you will all have a relaxing weekend. I hope to cook a few dishes for you. I receive a lot of emails from newly diagnosed celiac people stressed out about what to fix for supper. Many younger viewers were used to purchasing boxes of food or grabbing take out food on the way home at night. That does not work out well with a gluten-free diet, especially if you are not a millionaire! I was raised in the country and my mother cooked most everything from scratch, so I continued on with that after I was married. I was a stay at home mom for many years so it was more affordable to cook from scratch, plus I have always grown a garden. Cooking from scratch is a skill that you gradually acquire through experimenting.  Don't fret if some of your dishes suck at first! That is how you find out if your family really loves you ha-ha. (NOTE: if  you really don't know how to cook, scratch is not an ingredient!!!!) Most of the gluten-free blogs I watched before starting this one used ingredients that are not very readily available and most of the recipes were for breads or desserts. Even if they are gluten-free I do not tolerate many breads or desserts! I try to focus on easy meals and if you notice on my label section I have broken it up into more categories.
The picture above shows a typical supper for me which took 20 minutes. I cut a bunch of mini-peppers in half, chunked up one sweet onion and two small red potatoes. I placed them on a baking sheet and topped with a little olive oil and some Mrs. Dash. I then took two chicken breasts and cut them in half so they were thinner and then in half lengthwise (almost like chicken strips, the smaller pieces cook faster). I placed them on the end of the same baking sheet and added some Greek oil and vinegar dressing. I baked it in a 400 degree oven for 20 minutes and went out and played in my flowers while it was cooking. Then YUM!!! dinner is ready.  My ingredients from Aldis were sweet onions $1.79 a bag  (used 1), Mini sweet peppers $3.49 a bag (used 1/4 bag), olive oil $2.99 (used a dash), Greek salad dressing $ 1.99 (used a dash). With the chicken and potato, this healthy, quick meal really only costs about $2 per person. I even had leftover chicken for sandwiches the next day.
Many people think that because I an a dietitian and write this food blog I cook gourmet meals everyday. Wrong! I am busy, tired, stressed just like everyone else. I might make a new recipe or fancy dish once a week! My typical week-day meals are as follows:

Breakfast: boiled egg, muffin, yogurt & berries
Lunch: bean salad, quinoa salad or vegetable soup
Supper: grilled meat, poultry or fish and 2-3 vegetables
The muffins, eggs, salads or soup are all made on the weekend. So the moral is, keep it simple. Let go of those gluten-filled foods that you used to eat and probably weren't good for you anyway.
